Overview of Chilean Food
Chile produces the healthiest food. Chilean cuisine consists of a combination of Spanish and traditional Chilean ingredients. The cuisine is very unique because of its ingredients and colors. Because of similar climate and geography, Chilean food seems similar to Peruvian food, but it is actually different.

Seafood is a main staple in Chile. They eat loco (abalone), erizo (sea urchin) and piure (an unusual red invertebrate), and they eat the common fish such as sardines, tuna, and salmon. Other popular dishes with seafood are paila marina (shellfish stew), ceviche and caldillo (fish stew).
An example of an everyday snack are empanadas. Empanadas are the perfect example of Chilean cuisine, as these fried beef, onion and olive dumplings are served throughout the country.

· Ceviche- a traditional spanish dish that requires seafood to be refrigerated overnight with a lemon marinade
· manchas a la parmesana- lams with parmesan cheese, which offer a nod to Chile’s Italian influence

- Arrollado de Chancho - Chunks of pork wrapped in pork fat smothered in red ají (chili).
- Humitas - boiled corn leaf rolls filled with seasoned ground corn.
- Charquican - ground or diced meat cooked with garlic, onions, potatoes and pumpkin all mashed. It is a mushy dish but great.
- Caldillo de Congrio - conger-eel soup with onions, potatoes and carrots.
- Alfajor - a flat round pastry (almos like two biscuits together) filled with manjar and covered in Chocolate
- Carbonada - meat soup with finely diced beef and all kinds of vegetables such as potatoes, onions, carrots, broccoli, green pepper and parsley.
